If you'd like to show your client multiple options on a quote, you can utilize different line item groups (Article) (and subtotals) (Article) for each option.

You can also set the quantity of each item to 0, which will show the unit price of the item(s) to your client but will not have a large subtotal of all options added together.

The great news is the link your client receives is a live link (Article), meaning as you remove the unwanted groups, the client will see those changes right away.
